On December 2, 2024 , the Australian and New Zealand Food Standards Bureau ( FSANZ ) issued notice No. 320-24 , of which A1279 applied for soliciting opinions on approving mushroom mycelium as a processing additive during the fermentation of pea and rice protein.
According to the notice, the application was submitted by MycoTechnology Inc. , allowing shiitake mycelium to be used as a processing aid in pea and rice protein fermentation to produce protein ingredients added to a variety of foods. The deadline for soliciting comments is 6:00 pm on January 28 , 2025 (Canberra time).
