Not long ago, the Meat Science and Nutrition Engineering Innovation Team of the Institute of Agricultural Products Processing of the Chinese Academy of Agricultural Sciences developed a fresh meat preservation packaging material using polyvinyl alcohol / chitosan as a film matrix matrix to load titanium dioxide active substances. Packaging is an effective means to maintain the quality and quality of fresh meat. During processing, storage, circulation and other processes, spoilage microbial contamination is an important factor affecting the quality, safety and shelf life of fresh meat. In recent years, degradable active packaging technology with antibacterial functions has become a focus of research. Researchers used a self-assembly method to prepare a titanium dioxide-loaded polyvinyl alcohol / chitosan antibacterial and degradable packaging film through esterification and Schiff base reaction cross-linking. The packaging film added with 0.2% titanium dioxide showed good water and oxygen barrier properties. , thermal stability, and the elongation at break is as high as 260% ; using this packaging film to package fresh pork can extend its refrigerated shelf life from 5 days to 15 days, showing a good preservation effect.
The research provides technical reference for the research and development of new active packaging materials and provides technical solutions for preserving the quality and freshness of fresh meat.
